This is one of those dishes that tastes way better than it looks and that started off as a “fridge buffet” kind of meal. I had some leftover hummus that needed using up and I was also craving some bacon, so I came up with this. It turned out so unexpectedly super tasty that I thought I’d share it here.
Ingredients and instructions below…
- 100 grams frozen spinach (cooked and drained)
- 100 grams chopped bacon
- 6 cloves of garlic, minced
- tbsp olive oil
- 600 ml water
- 1 chicken bouillon cube
- 250 grams basmati rice
- 200 grams hummus (recipe here)
- soy sauce
Cook the frozen spinach, drain well and set aside. Then sauté the bacon and garlic in a frying pan with a bit of olive oil (on low heat) until nicely browned and crispy. While you’re waiting for that, cook the rice (crumble boullion cube into water after it boils, then add the rice). Add the spinach to the frying pan on one side so that any excess liquid cooks off, then mix it in with the bacon and garlic. Remove from heat and mix in the rice and hummus. Sprinkle on a bit of soy sauce and you’re done. Serves 2 hungry people.
