Here is a collection of a few favourites of mine (and friends of mine)&#8230;<\/p>\n<p><strong>All Purpose Vinaigrette<\/strong><\/p>\n<ul>\n<li>175 ml (3\/4 cup) olive oil<\/li>\n<li>60 ml) 1\/4 cup vinegar<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 tsp dried mixed herbs<\/li>\n<li>1-2 tsp grainy dijon<\/li>\n<li>fresh ground black pepper<\/li>\n<\/ul>\n<p>Whisk all ingredients together in a small bowl or shake in a mason jar to emulsify.<\/p>\n<p><strong>Basic Lemon Vinaigrette<\/strong><\/p>\n<ul>\n<li>160 ml (2\/3 cup) olive oil<\/li>\n<li>80 ml (1\/3 cup) fresh lemon juice<\/li>\n<li>salt &amp; freshly ground pepper<\/li>\n<\/ul>\n<p>Whisk oil and lemon juice in a small bowl or shake in a resealable jar to emulsify; season with salt and pepper.<\/p>\n<p><strong>Honey Dijon Vinaigrette<\/strong><\/p>\n<ul>\n<li>125 ml (1\/2 cup) olive oil<\/li>\n<li>60 ml (1\/4 cup) red wine vinegar<\/li>\n<li>1 tbsp dijon mustard<\/li>\n<li>1 tbsp honey<\/li>\n<li>salt &amp; pepper to taste<\/li>\n<\/ul>\n<p>Put all ingredients in a jar and shake until well mixed. For a creamier texture pulse all ingredients except oil in a blender to combine. With the blender running, slowly add the olive oil. Season to taste with salt and freshly ground black pepper.<\/p>\n<p><strong>Spinach Salad Vinaigrette<\/strong><\/p>\n<ul>\n<li>125 ml (1\/2 cup) olive oil<\/li>\n<li>60 ml (1\/4 cup) red wine vinegar<\/li>\n<li>1 tbsp grainy dijon mustard<\/li>\n<li>salt &amp; pepper to taste<\/li>\n<\/ul>\n<p>Combine all ingredients in a mason jar, and shake vigorously. Drizzle on your favourite spinach salad!<\/p>\n<p><strong>Anchovy Dijon Vinaigrette<\/strong><\/p>\n<ul>\n<li><span data-ingredient-quantity=\"true\">3<\/span> <span data-ingredient-unit=\"true\">anchovy<\/span> fillets, mashed<\/li>\n<li><span data-ingredient-quantity=\"true\">1<\/span> <span data-ingredient-unit=\"true\">clove<\/span>\u00a0<span data-ingredient-name=\"true\">garlic<\/span>, minced<\/li>\n<li><span data-ingredient-quantity=\"true\">1<\/span>\u00a0<span data-ingredient-unit=\"true\">tsp<\/span> d<span data-ingredient-name=\"true\">ijon mustard<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">80 ml (1\/3 cup)<\/span> <span data-ingredient-name=\"true\">white wine<\/span> <span data-ingredient-name=\"true\">vinegar<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">160 ml (2\/3<\/span>\u00a0<span data-ingredient-unit=\"true\">cup)<\/span>\u00a0<span data-ingredient-name=\"true\">extra virgin olive oil<\/span><\/li>\n<li>freshly ground black pepper<\/li>\n<\/ul>\n<p>Mash up the anchovies, add the minced garlic and mash all that together.
