This is a variation of a recipe I found in Janet Mendel&#8217;s <a href=\"http:\/\/www.amazon.co.uk\/Janet-Mendel\/e\/B001IXSF3C\/ref=ntt_dp_epwbk_0\"><strong>Cooking In Spain<\/strong><\/a>. sliced lengthwise in half<\/li>\n<li>1 large onion, chopped<\/li>\n<li>2 italian green peppers, chopped<\/li>\n<li>2 carrots, chopped<\/li>\n<li>2 large tomatoes, chopped (or 1 tin of chopped tomatoes)<\/li>\n<li>1 tsp each of sea salt, black pepper, cumin and piment\u00f3n dulce (la chinata is best)<\/li>\n<li>olive oil<\/li>\n<\/ul>\n<p style=\"text-align:justify;\"><a href=\"http:\/\/azaharskitchen.files.wordpress.com\/2010\/03\/la-chinata.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-2137\" title=\"la chinata\" alt=\"\" src=\"http:\/\/azaharskitchen.files.wordpress.com\/2010\/03\/la-chinata.jpg?w=300\" width=\"300\" height=\"218\" \/><\/a>Cook the sausages in a large saucepan, then chop up and put aside, reserving some of the juices from the pan. Saut\u00e9 the onions, peppers and\u00a0 garlic in a bit of olive oil until onions are translucent. Set aside.<\/p>\n<p style=\"text-align:justify;\">In a large pot add the lentils to boiling salted water and stir well. Then add the carrots, tomatoes, saut\u00e9ed veg, sausage and spices. Mix well, cover and simmer on low heat for about an hour and a half, stirring frequently.
