The ones you see below include jam\u00f3n and chorizo Ib\u00e9rico, caramalised onions and shaved truffle. The one you see above is my first attempt at making this at home. I used chorizo criollo and added some piment\u00f3n piquante as my favourite version so far (from Vineria San Telmo) includes spicy chorizo with lots of piment\u00f3n inside, which blends perfectly with the hot egg yolk and fried potatoes.<\/p>\n<p style=\"text-align:justify;\">I served it with a tomato and spring onion salad, both of which are just coming into season now, and it was a great side dish that added a fresh touch and balanced the meal out quite nicely.<\/p>\n<p style=\"text-align:center;\"><a href=\"http:\/\/azaharskitchen.files.wordpress.com\/2012\/04\/huevos-rotos-varios.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-2186\" title=\"huevos rotos varios\" src=\"http:\/\/azaharskitchen.files.wordpress.com\/2012\/04\/huevos-rotos-varios.jpg\" alt=\"\" width=\"600\" height=\"164\" \/><\/a><em>[huevos rotos at <a href=\"http:\/\/azahar-sevilla.com\/sevilletapas\/category\/gusto-ristobar-2\/\">Gusto Ristobar<\/a>, <a href=\"http:\/\/azahar-sevilla.com\/sevilletapas\/category\/vineria-san-telmo\/\">Vineria San Telmo<\/a> &amp; <a href=\"http:\/\/azahar-sevilla.com\/sevilletapas\/category\/el-gallinero-de-sandra\/\">El Gallinero de Sandra<\/a>]<\/em><\/p>\n<p style=\"text-align:center;\">Ingredients and instructions below&#8230;<\/p>\n<p><!--more--><\/p>\n<ul>\n<li><a href=\"http:\/\/azaharskitchen.files.wordpress.com\/2012\/04\/la-chinata-piquante.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-2187\" title=\"la chinata piquante\" src=\"http:\/\/azaharskitchen.files.wordpress.com\/2012\/04\/la-chinata-piquante.jpg?w=300\" alt=\"\" width=\"240\" height=\"240\" \/><\/a>3-4 medium potatoes, peeled and cut into chunks<\/li>\n<li>400 grams chorizo criollo<\/li>\n<li>4 free range eggs<\/li>\n<li>coarse sea salt and piment\u00f3n piquante<\/li>\n<li>olive oil for frying<\/li>\n<\/ul>\n<p style=\"text-align:justify;\">Par-boil the potatoes and set aside. Brown the chorizo in a large skillet, then slice and return to pan to brown the slices on both sides; set aside. Heat oil for deep frying and add the potatoes. When almost done fry the eggs in another skillet being careful not to overcook them.<\/p>\n<p style=\"text-align:justify;\">Drain fried potatoes and top with the chorizo and fried eggs. Dust with piment\u00f3n and add salt to taste.
