What can I say? Another winner.\u00a0 \ud83d\ude42<\/p>\n<p>Ingredients and instructions below\u2026<br \/>\n<!--more--><br \/>\n<strong>Pork &amp; Beef Meatballs<\/strong><\/p>\n<p>Makes approx 24 meatballs<\/p>\n<ul>\n<li>400 grams ground beef<\/li>\n<li>400 grams ground pork<\/li>\n<li>1 small sweet onion, minced<\/li>\n<li>2 tablespoons dried oregano<\/li>\n<li>3 tablespoons fresh flat-leaf parsley, finely chopped<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>2-3 dashes Worcestershire sauce, or to taste<\/li>\n<li>ground black pepper<\/li>\n<li>fine bread crumbs<\/li>\n<li>2-4 tablespoons olive oil<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Mix everything, except the olive oil, together in a large bowl (I find squishing it all between my fingers works best), slowly adding the bread crumbs at the end until you get a nice firm texture. Then form the meatballs, roll them in breadcrumbs, and place on a large plate or tray. Refrigerate for about 45 minutes before cooking.<\/p>\n<p style=\"text-align: justify;\">In a large saucepan, heat the olive oil and brown the meatballs, in batches if necessary (don\u2019t crowd them), turning occasionally until almost cooked, about 5-7 minutes. Set aside until the sauce is ready, then add the semi-cooked meatballs to the sauce and simmer on low heat for approximately 45 minutes.<\/p>\n<p><a href=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2688\" src=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-1024x1021.jpg\" alt=\"\" width=\"1024\" height=\"1021\" srcset=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-1024x1021.jpg 1024w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-150x150.jpg 150w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-300x300.jpg 300w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-768x766.jpg 768w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-1027x1024.jpg 1027w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-618x616.jpg 618w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-66x66.jpg 66w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2-444x444.jpg 444w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/06\/abondigas-oloroso-2.jpg 1600w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><strong>Oloroso Sauce<\/strong><\/p>\n<ul>\n<li>100 grams bacon or pancetta, chopped<\/li>\n<li>1 small onion, finely chopped<\/li>\n<li>4 cloves garlic, smashed and roughly chopped<\/li>\n<li>3 carrots, cut into small pieces<\/li>\n<li>ground black pepper<\/li>\n<li>1 cup oloroso sherry<\/li>\n<li>1 cup hot chicken broth<\/li>\n<li>2 tablespoons olive oil<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Heat olive oil in a saucepan and saut\u00e9e the bacon until almost crispy, then add the garlic and onion. Continue stirring until the onion is translucent and then add carrots and cook for another 5 minutes. Add the hot chicken broth and oloroso and turn up the heat until it starts to bubble, then turn it down to a medium heat and keep stirring until the sauce thickens a bit, about 5 minutes.
