But it got suddenly hot in Sevilla (42\u00ba) and it seemed like a nice fresh snack to have on hand. I used to always make this with plain greek yoghurt but since discovering <a href=\"https:\/\/azahar-spain.com\/kitchen\/labneh\/\" target=\"_blank\" rel=\"noopener noreferrer\">the joy that is labneh<\/a>, I decided to use that instead, though you need to plan ahead as the labneh needs a day or so in the fridge. Worth it if you have time as it gives the tzatziki a lovely creamier texture. I also prefer &#8220;half peeling&#8221; the cucumber (see pic below) as the skin can sometimes be a bit too chewy. And fresh herbs are a must. I did try a version with dried dill and&#8230; meh.<\/p>\n<p>Ingredients and instructions below&#8230;<br \/>\n<!--more--><\/p>\n<ul>\n<li class=\"p1\"><span data-amount=\"2\" data-unit=\"cup\">1<\/span> grated cucumber, half-peeled<\/li>\n<li>1-2 cloves garlic, minced<\/li>\n<li class=\"p1\"><span class=\"s1\"><span data-amount=\"1.5\">1 \u00bd<\/span> <\/span>cups labneh (start with 440 grams greek yoghurt)<br \/>\nor 330 grams plain greek yoghurt<\/li>\n<li class=\"p1\"><span data-amount=\"2\" data-unit=\"tablespoon\">2 tablespoons<\/span> extra virgin olive oil<\/li>\n<li class=\"p1\"><span data-amount=\"2\" data-unit=\"tablespoon\">2 tablespoons<\/span> chopped fresh dill and\/or mint<\/li>\n<li class=\"p1\"><span data-amount=\"1\" data-unit=\"tablespoon\">1 tablespoon<\/span> lemon juice<\/li>\n<li class=\"p1\"><span class=\"s1\"><span data-amount=\"0.5\">\u00bd<\/span> <\/span>teaspoon sea salt<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-2639\" src=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2.jpg\" alt=\"labneh (2)\" width=\"400\" height=\"400\" srcset=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2.jpg 640w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2-150x150.jpg 150w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2-300x300.jpg 300w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2-618x618.jpg 618w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2-66x66.jpg 66w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2019\/01\/labneh-2-444x444.jpg 444w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><br \/>\nTo make labneh: line a large sieve with cheesecloth; set over a medium deep bowl. Place yoghurt in sieve. Gather edges of cheesecloth to cover yogurt. Place in refridgerator and let drain for 1-2 days.<\/p>\n<p style=\"text-align: justify;\">OR&#8230; line a Melitta size 4 cone with a filter, add yoghurt, set over a bowl, cover with plastic wrap, refridgerate overnight.<\/p>\n<p style=\"text-align: justify;\">Remove as much of the moisture from the grated cucumber as possible. You can either salt it and leave it in a seive for about half an hour, or simply squeeze it between paper towels or a cotton t-towel.<\/p>\n<p style=\"text-align: justify;\">Put all the ingredients into a bowl and stir to blend. Adjust seasoning and herbs if you feels it needs a bit of extra anything. And that&#8217;s it. I like to let the tzatziki sit in the fridge for about 15 minutes before serving just to give the flavours time to meld.
