To be honest, I don&#8217;t even know if I&#8217;d ever had potato and leek soup before, but on a wintry weekend it sounded like just the thing. So after going through a few online recipes I did my usual mashup and it turned out great, with a lovely smooth texture, total comfort food (and even better the next day). Some of the recipes I saw added cream after blending but I wanted to keep it &#8220;lighter&#8221; and it was quite filling as it was.<\/p>\n<p>Ingredients and instructions below&#8230;<br \/>\n<!--more--><\/p>\n<ul>\n<li>500 gr potatoes, peeled and cut into small chunks<\/li>\n<li>400 gr leeks (white part only), cleaned and cut into 1 cm slices<\/li>\n<li>2 medium sweet onions, diced<\/li>\n<li>2-3 garlic cloves, diced<\/li>\n<li>salt &amp; pepper<\/li>\n<li>2 tbsp butter<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>1 &#8211; 1..5 litres broth<br \/>\n(I used chicken, but you can also use veggie broth)<\/li>\n<li>croutons (optional)<\/li>\n<li>greek yoghurt (optional)<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3542\" src=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2.jpg\" alt=\"\" width=\"800\" height=\"800\" srcset=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2.jpg 800w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2-300x300.jpg 300w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2-150x150.jpg 150w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2-768x768.jpg 768w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2-618x618.jpg 618w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2-66x66.jpg 66w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-2-444x444.jpg 444w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/p>\n<p style=\"text-align: justify;\">Cut up all the veg then heat the olive oil and butter in a large heavy pot. When it starts to froth add the onions, leeks and garlic and mix well, then a few minutes later stir in the potatoes and season with salt and pepper.\u00a0 Cover with a vented lid and cook over a low heat for about 10 minutes, until the potatoes are soft but not browned.<\/p>\n<p style=\"text-align: justify;\">Add about a litre of the broth and bring to a boil, then turn it down to a med-low heat and cook for about 10 minutes, until the veggies are cooked through. Let the pot cool a bit on a cooling rack (5-10 minutes) then gently blend with a stick blender until smooth. Be careful not to over blend or use too high a setting as this will make the potatoes go &#8220;gluey&#8221;.<\/p>\n<p style=\"text-align: justify;\">Reheat the soup, adding more broth and seasoning if you like. Ladle into bowls and top with crispy croutons and a dollop of strained greek yoghurt (or cr\u00e8me fra\u00eeche).<\/p>\n<p>For the croutons I toss cubes of wholewheat sourdough in lots of olive oil and season with salt &amp; pepper, then air fry them until they are browned and crispy.<br \/>\nFor the yoghurt I strain it in a melitta coffee filter for a couple of hours until it gets extra thick and lovely.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3568\" src=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek.jpg\" alt=\"\" width=\"608\" height=\"640\" srcset=\"https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek.jpg 608w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-285x300.jpg 285w, https:\/\/azahar-spain.com\/kitchen\/wp-content\/uploads\/2024\/01\/potato-leek-422x444.jpg 422w\" sizes=\"auto, (max-width: 608px) 100vw, 608px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>When I was at the market the other day I saw some nice looking leeks and suddenly thought I&#8217;d like to try making potato and leek soup.
