This is the ultimate in sprouts recipes, that I discovered last year on Wandering Coyote’s Retorte blog. A few small changes have been made here. Fast and easy to prepare, it should convert even die-hard sprout haters. In part, I think, because cooking them sliced like this eliminates some of the strong sprouty flavour that some people don’t like. And then there’s the bacon…

- 1/2 kilo brussels sprouts, trimmed and sliced thinly
- 150 grams of bacon, diced (or diced pancetta)
- 50 grams pine nuts
- 2-6 cloves garlic, thinly sliced
- salt & freshly ground black pepper
- 1 tbsp olive oil
In a large skillet, fry the bacon and garlic in the olive oil until nicely browned and crisp. Add the pine nuts, and stir until they’re just slightly toasted. Add the sprouts and sauté until tender and bright green. Salt & pepper to taste.
