Flour tortilla rollups are a favourite around casa az, and I make several variations. These spinach ones have toasted pinenuts and feta cheese and are spiced up with chili flakes. I also make them with a grated mild white cheese, like havarti. Or a mix of both white & feta cheeses. Fast and easy to make, satisfying and low carb.

- 4 flour tortillas
- 200 gr frozen spinach
- handful of pinenuts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- chili flakes (optional)
- salt & freshly ground black pepper
- feta cheese
Cook the frozen spinach and drain well. Toast the tortillas on both sides in a non-stick frying pan. Set aside. In the same pan toast the pinenuts and set aside, then add the olive oil and sauté the shallot and garlic until transparent. Add the spinach and season with salt & pepper (and chili flakes) to taste. Spread mixture evenly across the bottom of the pan and crumble the feta cheese on top. Cover and continue cooking on low heat until the cheese is heated through and partially melted. Spoon into tortilla shells.

Jeez, you really do like to put garlic in everything, eh? I’m garlic crazy too, but there are good cases for leaving it out. This, to me, is one of them. Your roll-ups look smashing, but I wonder if 3 cloves of garlic will overpower that lovely subtle feta…?
Hmmm… maybe I have to do garlic detox again. Three cloves is nuthin anymore. Especially when sautéed. Raw might be too strong though.
Your taste buds have certainly become immune to the power of the small onion – 3 cloves, even sautéed, would be a nuclear of garlic in such a delicate wee dish!
Should say ‘nuclear blast’ – sigh.
